This is one of my kids favorite dish. And by that I mean my son and my boyfriend’s son. My daughter still won’t taste it. Pretty sure she would love it, but still stubborn as a horse.
I’ll not waste your time anymore, so here is the recipe.
Spring Rolls with Chicken Recipe

400 grams mixed chicken meat
2 medium size carrots
1/4 of a small cabbage
1/2 medium size yellow onion
2 cloves of garlic
50- 100 grams of rice noodles (vermicelli)
1 tablespoon of fish oil (optional)
1/2 tablespoon of Worcester sauce (optional)
1-2 tablespoons of oyster sauce (optional, I love this one)
oil for frying
sweet and sour sauce (for serving)
1 bag of spring rolls paper – I used 24 in this recipe.
Directions
- Wash the cabbage, onion, garlic and the carrots. Don’t feel afraid to use the ugly carrot you have in the back of your fridge. Peel the carrots if they look as ugly as mines.
- Grate the cabbage, carrots and the garlic, using a mandoline slicer or a normal grater (like the one I have). The cabbage and the carrot will go through the big holes, while the garlic through the small one. Set aside. 2
- Cut the onion in small pieces.
- Put the mixed chicken meat and the vegetables in a pan, together with 2 tablespoons of oil.
- Add salt, pepper, fish oil, oyster sauce, and Worcester sauce. Mix. Let them simmer for 10 minutes.
- Meanwhile boil some water in a pot. Add the rice noodles (vermicelli) when the water is boiling, and turn the stove off. Let it sit for 1-2 minutes. You can read the instructions on the package at this point.
- When the meat and the vegetables mixture is ready (cooked), move it to a big bowl and mix it together with the rice noodles. Now your mixture for the spring rolls is ready.
- Start rolling your spring rolls. Watch the video bellow to see how to do that.
- Fry the spring rolls in a frying pan. Watch the video bellow if you want to see how to I fry them with less oil. Alternatively you can bake them in the oven.

Notes
- You will need to add more oil as you go, while frying the spring rolls.
- Don’t forget to always turn the spring rolls around, so they get fried evenly.
