We all know that avocado is super healthy and incredibly tasty. It is true that authentic guacamole is probably the first thing that comes to everyone’s mind, but there are other options too. If you are making toasts regularly, I recommend getting yourself an electric griddle. Regular sandwich toast machines will not give you the edge to make quality toasts at home. The electric griddle from Cuisinart is exceptional. You can also use it for making a variety of grills; it is a versatile equipment. The temperature range is between 175 to 450 °F. Note that the nonstick plates are dishwasher safe for easy cleaning.
Avocado Toast Recipes
It is best to use artisan bread slices for these recipes as it will add to the flavor significantly. You can check out my golden artisan bread recipe for an easy solution. Most of these toast require fresh avocados, except for the one made with mashed eggplants, for which you can find the recipe in this roasted eggplant salad article. 2 avocados
2 Roman tomatoes
4 slices of artisan bread
1/4 bunch of fresh basil
Grated parmesan cheese
- Toast 2: Mashed eggplant salad with avocado**
2 avocados
1 cup mashed eggplant salad
2 tomatoes
6-7 pieces of pickled beets
4 slices of artisan bread
1/4 bunch of arugula
- Toast 3: Mashed avocado with Mediterranean tomato salad **
2 avocados
4 slices of artisan bread
2 tablespoons of sliced black olives
1 red onion
2 Roman tomatoes
1/4 bunch of parsley
50 g feta cheese
2 tablespoons of olive oil
1 teaspoon of balsamic vinegar
- Toast 4: Guacamole and boiled beans**
2 avocados
1 small tomato, diced into small cubes
4 tablespoons of diced red onions
1 tablespoon of cilantro
2 tablespoons of lime juice
2 jalapeno peppers, sliced thinly
Salt and pepper to taste
1 cup of boiled beans (use any type you like)
Directions
- Toast Bread Directions:
- Brush extra virgin olive oil on the bread slices before grilling them.
- Toast 1
- Slice the tomatoes and avocados.
- Place them on the toasted bread slices as shown in the picture below.
- Sprinkle grated Parmesan cheese on top.
- Toast 2
- Spread eggplant salad on the bread slices.
- Dice the pickled beets, avocados, and tomatoes.
- Place the diced veggies on top of the bread slices as shown in the picture below, and decorate with chopped arugula.
- Drizzle olive oil on top.
- Toast 3
- Mash the avocados in a small bowl.
- Add salt according to your preference.
- Dice the tomatoes and onions.
- Mix them in a small bowl.
- Add two tablespoons of olive oil.
- Add one teaspoon of balsamic vinegar.
- Add a pinch of salt, and mix well
- Dice the feta cheese into small cubes.
- Spread the mashed avocado on the bread slices.
- Decorate the rest (olives, feta cheese, and the tomato salad) as shown in the picture.
- Toast 4
- Mash the avocados in a small bowl.
- Add all the ingredients except for the boiled beans.
- Blend well with a fork.
- Spread the mixture on the bread slices.
- Add about two tablespoons of boiled beans on top.
Notes
- Make sure you pick ripe but not over-ripe avocados for these recipes.
- Sprinkle garlic salt over the toasted breads to elevate the flavor furthermore.
