Piyaz is a traditional Turkish salad enjoyed with many different dishes. It is another quick salad full of proteins. Moreover, this recipe goes back hundreds of years and has a massive reputation with grilled food. If you visit any kofte restaurant in Turkey, you will notice that it is customary to have piyaz with kofte kebab and ayran (yogurt drink). The combination of white onions, chopped parsley, extra virgin olive oil, and vinegar makes the perfect sauce to prepare you for the spicy meatballs.
It would be fair to say that I grew up on this witty bean mixture. Every time we went to a grill place, it was the first thing my dad used to order from the menu. I guess it runs in the family. We cannot simply say no when tomatoes, onions, and vinegar come together. Piyaz salad and kofte kebab are like burgers and fries to me; inseparable. However, you can consume it solely if you like. And it is a great way to load up your protein from plant-based sources.
Keep in mind that piyaz is a versatile salad. You can replace the white beans with any other beans you prefer. However, I fancy the original version with lots of vinegar. And, if you are planning to pair it with kofte, then do not even think about replacing the white beans. Some people might consider it as an insult :-).
Note that it all takes about ten minutes to prepare this if you use canned white beans.

Piyaz Salad – Turkish White Beans Salad

1 can 15.5 Oz. (440 g) white beans (navy beans)
1 medium-size white onion, sliced in half rings
1 medium-size tomato, diced
2 tablespoons of vinegar (any type of vinegar is fine)
3 tablespoons of extra virgin olive oil
1/2 lemon, freshly squeezed
1 tablespoon of chopped parsley
Salt to taste
Directions
- Wash and drain the canned white beans.
- Mix the vinegar, olive oil, and lemon juice in a small cup.
- Add this mixture onto drained white beans, mix well with a spoon.
- Transfer the mixture onto a serving plate.
- Place the diced tomatoes, sliced onions, and the chopped parsley on top.
Notes
- Some prefer to add hard-boiled eggs on top of their piyaz salad. They simply slice the hard-boiled egg and decorate it on top along with chopped parsley.
