Spicy Carrot Noodles with Sesame Seeds

Ingredients

  • 3-4 medium size (1/2-pound / 225 g) carrots, sliced into noodlesslicing carrot noodles

  • 2 green onions, sliced

  • 2 tablespoons sesame oil (or extra virgin olive oil)

  • 1 tablespoon rice vinegar (or any other type you prefer)

  • 1 tablespoon honey

  • 1/2 teaspoon turmeric powder

  • 1/2 teaspoon garlic powder

  • 1 tablespoon unsalted soy sauce

  • 1 teaspoon ground red pepper

  • 1 teaspoon sesame seeds

  • 1/2 bunch parsley or cilantro, chopped

Directions

  • Add the sesame oil into a saucepan or wok pan.
  • Place over medium heat.
  • Add all the spices and carrots, mix well.saute the carrot noodles
  • Stir occasionally until the carrots become softer.
  • Add the soy sauce.
  • Add the chopped parsley (or cilantro).
  • Add the sliced green onions.
  • Remove from heat and serve immediately.

Notes

  • You can also add 3 tablespoons roasted peanuts, 1/2 teaspoon dry ginger, and 2 tablespoons lime juice to add some Thai flavor.
  • If you want to make the carrots noodles a bit richer, add 1 cup sliced shitake mushrooms and 1 cup sliced broccoli with carrots.

How to make veggie noodles without a spiralizer?

You can still make veggie noodles if you don’t have a spiralizer. The first method is to use a mandolin slicer. You will need to select the julienne cutter and adjust the blade thickness to 1/8 inches. This way, you can get super thin slices to make noodles. The second method is to use your knife skills. If you have a quality chef knife and a soft-surface cutting board, you are all set. Start by slicing the zucchini or carrot into thin ribbons and stack them on top of each other. Next, cut the ribbons into thin noodles. The third method is to grate the veggies with the large side of your grater. Make sure to slice off the ends of the veggies to get the best results out of the above methods.
