4 large potatoes, cubed
5.3 Oz (150 g) ground beef (or any other meat / skip if you are making vegan version)
1 large white onion, diced
3 tablespoons butter
3 tablespoons of extra virgin olive oil
1 tablespoon tomato paste
1/2 teaspoon turmeric powder
1/2 teaspoon ground cayenne pepper
1/2 teaspoon ground black pepper
1 teaspoon salt
3-4 cups water
- Optional:
1 chili pepper, sliced thinly
1 garlic clove, crushed
Directions
- Dice the potatoes into large cubes.
- Dice the onions (the smaller, the better).
- Add 3 tablespoons olive oil into a large saucepan
- Bring it to medium heat and add the diced onions.
- Saute the onions.
- Add crushed garlic clove (optional).
- Add the ground beef and continue to simmer and sauté.
- Add the tomato paste when the ground beef is fully roasted.
- Blend well with a spatula.
- Add all the spices and stir a few times.
- Continue to cook for about 2-3 minutes.
- Add 2 cups of water
- Add the diced potatoes.
- Add more water (water level should slightly cover the potatoes).
- Cook half-covered until the potatoes get softer (about 20-30 minutes).
Notes
- Add one teaspoon Better Than Bouillon veggie base to increase the flavor. One teaspoon of the veggie base is equal to one bouillon cube. Alternatively, you can use any kinds of bouillon you prefer.
