This recipe is part of my eat vegetarian-for-a-day movement, as I want to be part of the eat less meat to save the planet goal. Are any of those statements backed up by science? Yes, they are, but it is not my goal here to convince anyone about anything, but merely just to show you one of the easiest spinach recipes, and by far one of the most delicious meals I have ever had – that contains spinach, of course.

minutesSuper easy and healthy recipe for spinach lovers, and not only.
Ingredients
500 grams fresh spinach
1/2 yellow onion – medium sized, or 1 small onion
2 garlic cloves
200 grams milk
1 tablespoon of cornstarch
salt and pepper
3 tablespoons of oil + 1 teaspoon of butter
Directions
- Wash away all the dirt and the sand from the spinach.
- Add the spinach to a boiling water pot, and let it boil for 1-2 minutes.
- Move the spinach in a different pot, filled with cold water. This step is important to maintain the green color of the spinach. If that is not important for you, you can skip this step.
- Drain the spinach from all the water, and cut it in small pieces, on a cutting board. Set it aside.
- Finally cut the onion and garlic, and fry then in 3 spoons of oil and a teaspoon of butter. When the onion is translucent, add spinach. Mix until the onion, garlic and spinach are incorporated (less than a minute).
- Add 1 cup of milk (200 grams), to the mixture, and after it starts boiling, let it simmer for 5 minutes.
- Prepare the cornstarch with 2 tablespoon of cold mater separately, and then add it to the spinach mixture. Mix until it becomes thick enough. (1 or 2 minutes).
- Add salt and pepper to taste.
Notes
- If the spinach stew is too thick, add more milk. If it is too liquidly, add more cornstarch.
- It can be eaten as a side dish, with fried eggs (most common in our family), or with chicken.
- It can be also eaten as a main dish, but then the portion sizes will be bigger, and the amount written in the recipe will serve 2 people only – or maybe just one really hungry person.
