The trick here is the grilling time. You need to pay attention when cooking poultry. I found out that about 10 – 12 minutes give the best results. Make sure you flip the chicken at halfway. Also, note that they tend to taste like rubber if you keep them on the grill too long. However, for the sake of being safe from salmonella, always make sure to cook your chicken well. I suggest you buy organic chicken if it is available in your area. The meat turns out a bit firmer, but the taste is out of this world.

2 pounds chicken breast – skinless (or any other part of the chicken that you prefer)
2 medium sized lemons – freshly squeezed
2 garlic cloves crushed
1/2 glass virgin olive oil
1 tablespoon thyme powder
1/4 teaspoon turmeric powder
1/2 tablespoon ginger powder
1/2 teaspoon curry powder
1 teaspoon cayenne pepper powder
salt and ground pepper to taste
Directions
- Put the olive oil and the spices into a large bowl and mix well.
- Place the chicken breast on a cutting board and slice horizontally with a long, sharp knife. You will end up with thinner chicken fillets.
- Once you cut all the chicken breasts, add them into the bowl and make sure they soak in the sauce. This method will help to marinate them well.
- Keep them in the fridge for 2 hours before you start grilling.
- Cook the chicken breasts on medium heat for 10 to 12 minutes.
Notes
- Chicken needs to rest once it is cooked. This is the same scenario with steak. Make sure you let it rest for a few minutes before start cutting. This method will help to redistribute juices inside the meat.
How long do you grill chicken?
It is best to grill chicken for about 9 to 12 minutes. The FDA and USDA suggest cooking chicken until the inside temperature reaches 165°F (74°C) for best results. This rule is also the same for all other poultry products. So, it is time you get a quality meat thermometer if you don’t have one already. How to prevent the chicken from sticking to the grill?
It is really annoying when the chicken gets stuck on the grill. It is almost impossible to flip. However, there is an easy solution for this matter.
